
Bhuna Khichuri

On such a rainy day, who does not want to eat khichuri. But if it is a beef bhuna kichuri then you do not need anything. But many have hesitated actually how they made the delicious food at home. This special food can be made very easily.
Khichuri is a very popular one-pot meal in Bangladesh. There are different kinds of varieties that are cooked and relished in different parts of the country. When we cook khichuri we mainly use either moong dal (yellow lentil) or masoor dal (red lentil) to prepare the same. Also, while moong dal khichuri is thick in consistency, the masoor dal khichuri is runny. Both are popular, both are highly delectable.
Coming to Bhuna Khichuri (also known as Bhuni Khichuri) is different. Bhuna Khichuri can be prepared with vegetables of choice (the vegetarian version) or with chicken, mutton or beef.
Bhuna Khichuri is a wholesome, flavourful, and super delicious one-pot meal and is hugely consumed in Bangladesh.
Here’s how I make my Mangshor Bhuna Khichuri
Ingredients:
- Beef 1.5 kg
- Kalojira or Basmati rice 3 cups
- Moong dal (yellow lentil) 2 and ½ cups
- Turmaric powder 1 table spoon
- Red chili powder 1 table spoon (optional)
- Coriander powder 1 table spoon
- Cumin Powder 1 table spoon
- Ginger paste 1.5 table-spoon
- Garlic paste 1.5 table-spoon
- Choped Onion 1 Cup
- 7 green chilli, slitted (adjust according to tolarance)
- Canola oil 2 Cup
- Ghee (clarified butter) 4 table-spoon
- Salt, according to taste
- Bay leaf 2/3
- Cinnamon Powder1/2 table spoon
- Green cardamom Powder 1/2 table spoon
- Clove Power 1/4 table spoon
- Javitri Powder 1/4 table spoon
- Nutmeg powder 1/4 table spoon
- Warm water, as require
Instructions
Roast moong lentil on slow heat till aroma starts coming and lentil is crisp. Soak in water for about hour. Then drain the water. Wash rice and strain it. Mixed both of them.
Marinate meat with all spices for at least half-hour. Take a heavy bottom saucepan and heat. give oil. Fry the sliced onion till it becomes golden brown. Take out the fried onion from oil and keep aside. In the same oil add marinated meat and bay leaves. Saute it till water comes out. If needed add 2/3 cups water and cook it under closed lid on low hit till meat is tender (minimum 1 and half hour). Don’t keep water at this stage.
Take out cooked meet. Add mixed lentil and rice. Cook it for 5 minutes. Add 6 cups hot water. Mix well and cook it under the closed lid on high heat for 10 minutes.
You have to add fried onion, clarified butter, cooked meet. Cover the lid. Cook it on low heat 15-20 minutes (until both rice and dal are nicely done and water gets absorbed). Make sure to check and stir in between so that khichuri does not stick to the vessel bottom Then it put down.
Then your favorite Beef Bhuna Khichuri is ready to be served.
Note : Once it is done, you can add some more ghee from above. Though, adding extra ghee is totally optional but highly recommended. This extra ghee make your Khichuri more delicious.
