Description
Squirrel-Shaped Fish is one of the famous traditional Jiangsu Cuisines. It is named for its shape. The dish can be traced back to the Qing Dynasty. It usually uses the yellow croaker, common carp or other fishes. It is crispy outside and tender inside, sweet and sour, and bright in colour.
Ingredients:
- 1 grass carp
- Cooking wine and salt (marinating)
- Oil
- Starch (coating)
- 10g minced garlic
- 100g Ketchup
- 15g sugar
- 8g soy sauce
- 8g vinegar
- 180g broth or water
- Cooking wine
- Starch and water
- Spring onion, pine nut (optional, decoration)
